Luscious, juicy and sweet, peaches are peak summer goodness! In fact, they’re soooo good that August is National Peach Month! Peaches have been a favorite fruit for a long, long time—according to scientists, the domestication of this sweet, succulent fruit can be traced back at least 7,500 years to China’s lower Yangtze River Valley. (Wow, that IS quite a while!) And get this: peaches aren’t just delicious; they’re a versatile fruit that pairs perfectly with savory, sweet and everything in between! So go ahead and give these amazing recipes from Bigelow Tea a try—odds are you’ll think they’re peachy keen!
Grilled Green Tea Chicken and Peaches

Grill chicken for dinner tonight using Bigelow Green Tea with Peach for a delightful flavor.
55-65 Minutes
Serves 4
Ingredients
- 1 whole chicken – cut up – about 4-5 pounds
- ¾ cup (180mL) water
- 6 Bigelow Green Tea with Peach Tea Bags
- ⅓ cup (80mL) honey
- 1 teaspoon (5mL) freshly ground pepper
- ¼ cup (60mL) extra virgin olive oil
- Freshly grounded pepper and salt to taste
- 4 fresh peaches, halved and pitted
Instructions
Instructions for Marinade: In a small saucepan over medium high heat, bring water to the boil and add teabags, reduce heat and simmer for 10 minutes reducing liquid by ¼. Stir in honey and black pepper.
Instructions for Grilling Chicken: Preheat grill. Rub chicken with the olive oil and sprinkle lightly with salt and pepper. Place chicken on grill, turn to medium low heat (or use “Indirect” cooking according to grill instructions) and brush with Green Tea with Peach marinade. Cover grill and cook chicken for 15 minutes, brush again with marinade, and cook for another 15 minutes, turn over and brush with marinade and continue cooking for another 20 minutes. Check chicken with a meat thermometer which should read 140-150*F. Remove from heat. Brush peaches with marinade and place cut side down on grill. Grill for 3-4 minutes. Turn, brush with marinade and grill for another 3-4 minutes.
Perfect Peach Upside-Down Cake

Makes one 9″ round cake
Ingredients
- ¾ cup boiling water
- 3 Bigelow Perfect Peach Herb Tea Bags
- ¾ cup butter or margarine; softened, divided
- ½ cup brown sugar
- 1 can (16-oz.) sliced peaches, well-drained
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup granulated sugar
- 2 eggs
- 1 ½ teaspoons grated lemon or orange peel (optional)
Instructions
Pour boiling water over tea bags. Let steep 10 minutes. Remove tea bags, squeezing out liquid. Meanwhile, drain peaches in a colander; transfer to a plate and pat dry with paper towels. Set aside. In small skillet, melt ¼ cup butter. Add brown sugar and cook over medium heat until brown sugar is dissolved. Pour mixture into bottom of round 9″ cake pan. Arrange peaches on sugar mixture. Preheat oven to 350° F. In small bowl, combine flour, baking powder and salt. In large mixer bowl, beat remaining ½ cup butter with granulated sugar until combined. Add eggs and lemon peel, and beat at medium speed until smooth and creamy about 2 minutes. Alternately beat in flour mixture and tea mixture, beating well after each addition. Spread batter evenly over peaches. Bake 35-40 minutes or until cake tests done. Remove from oven and let stand on wire rack 10-15 minutes. Loosen cake from sides of pan and invert cake onto serving plate. Serve warm.
Peach Chai Iced Tea

Ingredients
- 1½ cups cold water
- 3 Bigelow® Perfect Peach® Herbal Tea Bags
- 3 Bigelow® Spiced Chai Tea Bags
- 7 cups of cold water
Instructions
1½ cups boiling water over tea bags in a 4-cup glass measuring cup. Let steep for 10 minutes. Squeeze and remove tea bags, let the concentrated tea cool. Pour concentrate into a 3-quart pitcher. Add the cold water and stir. Pour into ice-filled glasses and serve.
